Remove Date Picker so I can type the date

How do I disable the date picker so we can just type the date?

Our one app has 3 dates per record, including the birthday, which can be up to 100 years ago. If our data entry people have to sit there and use that picker it is literally going to take 10 times as long to enter a record. They're well versed in typing the date using YYYY-MM-DD.

The answer appears to be that you have to change the definition of the field in the Forms Editor from Date to Text. Then you can just type it in YYYY-MM-DD.
